Pedro Ximénez

Pedro Ximénez is a grape variety native to southern Spain. Their sole use comes in the production of Spain's fortified wine, sherry. Sometimes the grapes are left to dry in the sun, thus enhancing the residual sugar, where they are then used to make the supremely sweet, luscious PX Sherry. For lovers of dessert wines, this is not one to miss.
